Quinoa Pizza Bites

More from the gluten free files… these DELICIOUS quinoa pizza bites I tried out last week! Based on this yummy recipe from Wonky Wonderful that I found on (where else?) Pinterest.

With marathon training in full force, and having a sensitive stomach, there’s this awkward period between when Mike gets home from work, when we go running, and when we actually eat dinner that we are typically starving – because it’s dinner time for normal people. To adapt, I’ve been trying to find healthier (but hearty) snacks to tide us over until our real meal. When I spotted this recipe, it seemed like a great way to boost our protein and carb intake while not spoiling our appetites or upsetting our stomachs.

First step – cooking the quinoa. Quinoa has become a fan favorite in the house due to its high protein content. It’s filling, and a great replacement for a lot of the carb-ier items we’ve been trying to avoid.

This was my first time trying the recipe, so I toyed around with filling the muffin tins to various heights to see how the bites would cook.

I tried serving the bites like this at first, like the original recipe called for. Since I used regular sized muffin tins instead of mini muffin tins, I think that made the bites less crispy and less tasty than we wanted. They were good, but nothing to write home about. Until…

I took some inspiration from a classic favorite – BAGEL BITES – to rebuild this little bite into a super delicious treat. Yum!

Quinoa Pizza Bites
1 c cooked quinoa
3 eggs
1 1/2 c shredded mozarella
1/3 c pepperoni slices, cut into small pieces
1/2 c pizza sauce or marinara
Salt to taste

Spray muffin tins (or mini muffin tins) and a baking sheet with nonstick cooking spray.

Combine quinoa, eggs, 1 cup of cheese, pepperoni slices, and salt in a bowl until fully mixed. Scoop into muffin pans. Bake 25-30 minutes, or until browned, at 350 degrees.

Cool for 5-10 minutes, then remove from tins and place onto a baking sheet. Top each bite with pasta sauce and sprinkle with the remaining cheese. Bake on high heat for 7-10 minutes, until cheese is melted and bites are a bit crisp.

Serve warm and eat up!
